As an avid cook, I love experimenting with ingredients that are not typically part of my repertoire and giving them a chance to shine. And today, it’s all about golden beets! Just like Harry Styles sings, they’re so golden and deserve to be in the spotlight. If you’ve never been a fan of red beets, I highly recommend trying their golden counterpart. With a sweeter taste and less earthy flavor, golden beets are a delicious addition to any dish.
Roasting Golden Beets
There is something wholesome about a roasted root vegetable with some simple seasoning that makes you feel connected to the earth. For this recipe use a peeler to peel the beets and chop into moon shaped pieces. Toss in some mild oil and season with some salt and freshly ground peppercorn. Then wrap in aluminum foil and roast. I use my air-fryer at 390° for 45 minutes or until the beets are tender. You can also use your oven, however, I just got my air-fryer for Christmas and have been using it for EVERYTHING.

Golden Beet Hummus: Adding a roasted golden beet to any freshly made hummus is a sure way to level up your hummus game.
Freshly Roasted: Eating them on their own with some salt and pepper.

Roasted Golden Beet Salad
- 3 Medium Golden Beet (peeled and cut into bite sized pieces)
- 1 tbsp Olive Oil
- Salt (to taste)
- Ground Peppercorn (to taste)
- 1/4 cup Vegan Feta Cheese (crumbled)
- 2-3 tbsp Walnuts (crushed)
- Handful of Fresh Microgreens
- Lemon (squeeze over salad)
- Peel beets and chop into bite sized pieces. Toss in olive oil, salt, and ground peppercorn. Wrap in tinfoil and roast until tender.
Oven Roasted: @ 425°F for 45-60 minutes
Air-Fried: @ 390°F for 45 minutes.
2. Construct salad with roasted beets, fresh microgreens, crumbled feta cheese, crushed walnuts, and a squeeze of lemon. (Option: Balsamic glaze dressing)
