One of my favorite hobbies is grabbing ingredients I don’t usually cook with and making them the star of the dish. That’s right, golden beets, it’s your moment to shine. In the words of Harry Styles… you’re so goldennnnn. If you have never been a fan of red beets, then I urge you to dive into wonderful world of golden beets. They have a noticeably less earthy taste and are sweeter than a red beet.
3Medium Golden Beetpeeled and cut into bite sized pieces
1tbspOlive Oil
Saltto taste
Ground Peppercornto taste
1/4cupVegan Feta Cheesecrumbled
2-3tbspWalnutscrushed
Handful of Fresh Microgreens
Lemonsqueeze over salad
Instructions
Peel beets and chop into bite sized pieces. Toss in olive oil, salt, and ground peppercorn. Wrap in tinfoil and roast until tender.Oven Roasted- @ 425°F for 45-60 minutesAir-Fried- @ 390°F for 45 minutes.
Construct salad with roasted beets, fresh microgreens, crumbled feta cheese, crushed walnuts, and a squeeze of lemon. (Option: Balsamic glaze dressing).
