Vegan Irish Pot Roast

This easy one-pot dinner is sure to delight you and your family this St. Patrick’s Day.

Ingredients
  

  • 3 carrots diced
  • 3 ribs celery
  • 4 red potatoes
  • 1 turnip or parsnip diced
  • 1 can jackfruit drained
  • 1 yellow onion
  • 4 cloves garlic
  • 1/2 cup green peas
  • 1 tablespoon no beef bouillon
  • 3 cups water
  • 1 cup coconut milk
  • 1/4 cup flour
  • 2 bay leaves
  • 4 sprigs fresh thyme
  • 1 tablespoon salt black salt preferred
  • Pepper to taste

Instructions
 

  • 1. Cut veggies to your liking
  • 2. Mix in flour into cut veggies in a casserole dish
  • 3. Pour mixed bouillon and coconut milk on top of mixture
  • 4. Add in salt, pepper, thyme- mix well.
  • 5. Preheat oven to 350 (roast option if available).
  • 6. Bake or roast for 1 hour, stirring every 15-20 minutes for an even bake. Serve with your favorite dinner rolls!
