Chinova Bioworks Mushroom Vegan Fining Agent

Mycobrio™, a fining agent derived from mushrooms that can replace synthetic and animal-derived fining agents like isinglass and gelatin, is now available from Chinova Bioworks, a Canadian company that uses fungi to reduce food waste. These fining agents are typically used in fermented beverages like beers and wines.

In addition to being a fining agent for the market for alcoholic and low/non-alcoholic wine, beer, cider, seltzer, and spirits, Mycobrio™ is described as a natural extract fiber that is derived from the stems of white button mushrooms. It also provides broad spectrum protection against spoilage brought on by yeast, mold, and bacteria.

Creating cruelty-free beverages

The recently created substance is useful for fining yeast, tannins, proteins, and other components from wine, beer, cider, and seltzers. According to the business, it is an advanced natural alternative to synthetic and animal-derived fining agents and can decrease or eliminate the need for cold crashing, filtering, and centrifugation techniques.

The success of Chinova

Chinova got a No Questions Letter from the US Food and Drug Administration (FDA) about its Generally Recognized As Safe (GRAS) application for its ChiberTMclean-label preservative produced from mushrooms a month after securing $6M in Series A funding.
