Hi! Hello and welcome! Thank you for stumbling on my part of the universe and for having interest in learning about me. My name is Catherine, I’m a registered dietitian and plant based enthusiast here to inspire you guys to eat more plants.
Making the switch to a vegan lifestyle has impacted my life in more ways than one. It helped transform my life towards better self care, redirect my passions and even impacted my career choices. I have been vegan since 2009 and I currently follow a mostly whole foods plant based diet. “Mostly” whole foods because I definitely fit in vegan treats here and there to enjoy with as much mindfulness as possible. My reason for choosing this lifestyle first started as a way to improve my health. My journey eventually led me to discover my passion and drive to use this lifestyle to help protect the environment and cause no harm to living creatures within my ability. I by no means force my practices on others, and truly believe that I’d rather spend my energy influencing and helping others discover how wonderful it is to increase the amount of plant based foods in their diet as much as possible. And if you happen to give a full plant based diet a shot, that’s awesome! Let’s make sure you’re doing this in the most sustainable way possible so you can feel empowered to stick with it for the long haul.
As a dietitian, I specialize in human nutrition. I have an MS in Human Nutrition from Drexel University and completed a 1200 hour accredited dietetic internship through the University of Houston in Texas. I passed the registered dietitian exam in September 2015, and since then have provided one on one counseling, cooking classes, and educational presentations using evidenced based nutrition in various settings. I have worked as a grocery store dietitian, an outpatient dietitian in a cardiology focused facility and currently work within the realm of employee wellness providing one on one counseling to clients. I hope to pass on all the information I’ve learned so far in my career on to you, to help empower you towards health. I will be using this platform to provide evidenced based nutrition education and plant based recipes that use simple ingredients.
I publish most of my day to day eating over on Instagram. So feel free to follow me along my journey. I will be posting many of the recipes from there on to here for easier access to you.
