Whip up a quick and creamy tomato soup using only a few simple pantry items. This recipe is basic and budget-friendly, using only canned tomato paste with coconut milk for a quick, cheap, and easy tomato soup. Add extra flavorings and spices as desired.

My Story

I was craving tomato soup one day but don't typically buy the pre-made stuff. I also rarely have the energy or motivation to get fancy and make a batch from scratch. This version uses basic ingredients, such as canned tomato paste and canned coconut milk. I simply heat them together until incorporated into a creamy soup and add whatever spices I have on hand. It goes well with crackers or vegan grilled cheese! It can also be used as a sauce for pasta or dip for breadsticks or pizza crust.

Ingredients
  

  • 1 can coconut milk
  • 1 small can tomato paste/puree

Optional:

  • chili flakes
  • garlic powder
  • Italian seasonings
  • nutritional yeast

Instructions
 

  • Empty contents of both cans into a saucepan
  • Simmer on low while continuously stirring until creamy, bubbly, and well-incorporated
  • Season to taste
  • Serve and enjoy!
