A warm, quick, and savory meal. This can be used as a basic soup base or enjoyed as is.

My Story

I was trying to come up with a healthier alternative to instant ramen noodles, which brought me to this simple broth. Those instant flavoring packets (as tasty as they are) are often not vegan and may include questionable ingredients with high sodium. A basic vegetable stock combined with nooch and some chili flakes is my go-to combo that hits the spot. Sometimes I eat it as is while other times if I'm feeling fancier, I'll throw in some leftover rice and cooked veggies. It also pairs great with a sandwich or vegan grilled cheese.

Ingredients
  

  • 1.5 cups boiled water
  • 1/2 bouillon cube or 1 tsp vegetable stock
  • 1 Tbsp nutritional yeast
  • 1/4 tsp chili flakes
  • Optional: cooked rice or rice noodles beans, peas, leftover cooked veg, TVP, etc.

Instructions
 

  • Add all ingredients into a bowl or large mug.
  • Pour boiled water into the bowl or mug.
  • Stir with a spoon and enjoy!
