This easy one-pot dinner is sure to delight you and your family this St. Patrick’s Day.

- 3 carrots diced
- 3 ribs celery
- 4 red potatoes
- 1 turnip or parsnip diced
- 1 can jackfruit drained
- 1 yellow onion
- 4 cloves garlic
- 1/2 cup green peas
- 1 tablespoon no beef bouillon
- 3 cups water
- 1 cup coconut milk
- 1/4 cup flour
- 2 bay leaves
- 4 sprigs fresh thyme
- 1 tablespoon salt black salt preferred
- Pepper to taste
1. Cut veggies to your liking
2. Mix in flour into cut veggies in a casserole dish
3. Pour mixed bouillon and coconut milk on top of mixture
4. Add in salt, pepper, thyme- mix well.
5. Preheat oven to 350 (roast option if available).
6. Bake or roast for 1 hour, stirring every 15-20 minutes for an even bake. Serve with your favorite dinner rolls!
