Ingredients
  

Ingredients for Pizza Dough

  • 4 cups all-purpose flour
  • 2 packets instant dry yeast
  • 1 tablespoon garlic powder
  • 12 ounces warm water
  • 2 tablespoons sugar
  • 2 tablespoons extra virgin olive oil

Ingredients for Toppings

    For the Street Corn

    • 1 cup frozen corn kernels
    • 1 tablespoon olive oil
    • 1 tablespoon vegan butter
    • ¼ tsp cayenne pepper
    • Salt to taste
    • ¼ tsp smoked paprika
    • ¼ cup nutritional yeast
    • Juice of 1 lime

    Other Toppings

    • 1 cup crumbled Thrilling Foods Bakon™️ bits
    • 2 cups shredded vegan mozzarella cheese
    • 1/2 cup thin-sliced red onions
    • 1-2 jalapeños thinly sliced (adjust to your spice preference)

    For Garnish

    • Fresh chopped green onions
    • Fresh cilantro leaves
    • For Elote Aioli
    • 1/2 cup vegan mayo
    • Juice of 1 lime
    • 1/2 teaspoon salt adjust to taste
    • 1/4 teaspoon chipotle powder adjust to your spice preference

    Instructions
     

    Prepare Pizza Dough

      1. Activate the Yeast

      • In a bowl, whisk together warm water, yeast, and sugar. Allow it to sit for about 10 minutes to ensure the yeast becomes active and foamy.

      2. Prepare the Dry Ingredients

      • In a food processor with an 11-cup capacity or larger, combine the all-purpose flour, garlic powder, and salt.

      3. Blend the Wet and Dry Ingredients

      • Stir the olive oil into the yeast liquid. With the food processor running, slowly pour the yeast mixture through the top of the food processor. Continue blending until the dough starts to come together.

      4. Knead the Dough

      • Once the dough forms and the machine begins to labor to turn it, remove the dough from the food processor.
      • Knead the dough by hand on a floured surface until it feels smooth and elastic.

      5. Rise and Rest

      • Form the dough into a ball and place it in a bowl. Cover the bowl with a tea towel.
      • Let the dough rise for 30-60 minutes, or until it has doubled in size.

      6. Preheat Your Oven

      • Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven while preheating.

      7. Prepare the Street Corn

      • In a skillet, heat the olive oil and vegan butter over medium-high heat.
      • Add the frozen corn and sauté until it's heated through and slightly charred.
      • Season with cayenne pepper, salt, smoked paprika, and lime juice. Mix well and set aside.

      8. Roll Out the Dough

      • Once the dough has risen, punch it down and divide it into two equal portions.
      • Roll out each portion into a 12-inch pizza crust on a floured surface.

      9. Assemble the Pizza

      • Place each pizza crust on a baking sheet or pizza stone.
      • Spread the prepared Street Corn evenly over the pizza crusts.
      • Sprinkle the crumbled Thrilling Foods Bakon™️ bits over the corn.
      • Evenly distribute the shredded vegan mozzarella cheese.
      • Add the thin-sliced red onions and jalapeños on top.

      10. Bake the Pizza

      • Place the pizzas in the preheated oven and bake for about 12-15 minutes, or until the crust is golden and the cheese is melted and bubbly.

      11. Prepare the Elote Aioli

      • While the pizza is baking, mix together the vegan mayo, lime juice, salt, and chipotle powder in a small bowl. Adjust the seasoning to your taste.

      12. Finish and Serve

      • Once the pizzas are out of the oven, drizzle the Elote Aioli over the top.
      • Garnish with fresh chopped green onions and cilantro leaves.
