This Southwest Style Mac & Cheese recipe hits all the marks! If you are looking for savory, those comfort food vibes this recipe is for you!

My Story

I am always craving mac n cheese, but the frozen tv dinner and boxed ones don’t cut it, I always have to add something to make it taste better. Well not anymore, this recipe hits all the spots and is easy to make!

Ingredients
  

  • * 4 tbsp vegan butter
  • * 1 yellow onion peeled and chopped
  • * 4 garlic cloves roughly chopped
  • * 2 tbsp white miso paste
  • * 4 tbsp all-purpose flour
  • * 2 cup almond milk
  • * 12 oz cavatappi pasta
  • * 4 oz vegan cheddar cheese
  • * ¼ cup breadcrumbs
  • * 4 tbsp nutritional yeast
  • * 2 oz pickled jalapeños drained and minced
  • * 4 oz roasted red peppers drained and minced
  • * Salt and pepper to taste
  • * 1 tsp lactic acid optional
  • * 2 oz parmesan shreds

Instructions
 

  • 1 let’s make the sauce!
  • Preheat the oven to 400°F. Bring a large pot of salted water to a boil for the pasta. Throw down the butter to a large nonstick skillet over medium heat. When butter is melted, add onion, garlic, miso paste, and a pinch of salt and pepper to the skillet and cook until onion is translucent, 3 to 5 minutes. Time to add the flour and stir. Finish with almond milk, whisk, and bring mixture to a simmer. Cook, stirring often, until sauce thickens, about 3 to 5 minutes.
  • 2 Time to make the pasta!
  • Add pasta to the boiling water, stir, and cook until al dente, usually 8 to 10 minutes. Drain and rinse the pasta with cool water to stop the cooking process and return to the large pot, off heat.
  • 3 Gotta Blend the cheese!
  • Add sauce, cheddar, and a pinch of salt and pepper and lactic acid to a blender. Blend cheese sauce until smooth, 1 to 2 minutes.
  • 4 Time to make the breadcrumb mix
  • Add breadcrumbs, nutritional yeast and parmesan to a bowl and mix well.
  • 5 Time to Put it all together and serve!
  • Start by adding the cheese sauce, jalapeños, and red peppers to the large pot with the pasta and stir. Transfer pasta to a baking dish, sprinkle on top with parmesan breadcrumbs, and bake until hot and bubbling, about 7 to 10 minutes.
