DIY Italian Dressing

Tasty and tangy Italian dressing without all the extra ingredients found in store-bought bottles. It can be made extra fancy with dried herbs and chilies. It's good used as a marinade, dressing, or sauce for many dishes. I enjoy it in a salad, on pasta, potatoes, as a bread dip, anything savory really. Leave out any ingredients you don't have and substitute with something else or add extra spices as desired. This one is flexible and can be adapted to taste.

My Story

I love Italian dressing but not so much the long list of ingredients found in store-bought versions. I also like to minimize the amount of oils in my diet and find the store-bought ones too oily. I initially used this recipe for marinating tofu (tofu feta) but loved the sauce so much on its own. It has become a staple in our home.

Ingredients
  

  • 1/4 cup apple cider vinegar
  • 3 Tbsp water
  • 2 Tbsp nutritional yeast
  • 1 Tbsp miso or vegetable stock
  • 1 Tbsp olive oil
  • 1 Tbsp oregano or Italian seasoning
  • 1 lemon juice
  • 1 tsp mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp liquid smoke
  • black pepper
  • chili flakes optional
  • fennel or rosemary optional
  • 1-2 cloves garlic minced optional

Instructions
 

  • Whisk all ingredients into bowl until well incorporated
  • Store in air-tight container refrigerated
  • Shake before using
